2 cups Green Lentils, rinsed
1/4 cup Gluten-free flour (there are a bunch of options at the grocery store)
1 15 oz can Organic Tomato Sauce
2 cups Veggie Broth
Brown Rice or a Brown Rice and Quinoa Pasta
Put lentils in pressure cooker, cover with 3 cups of water for every cup of lentils.
Set pressure cooker to high and cook for 8 minutes. Remove from heat and let the steam release naturally.
In a separate pan, heat coconut oil until melted on medium heat and whisk in flour. Let brown for 1-2 minutes.
Whisk in the can of Tomato Sauce and let brown another 2 minutes.
Slowly whisk in veggie broth until combined.
