I hope everyone had a great Labor Day weekend! Who was ready for school to start?! This mom!
This is such a quick and easy back to school snack AND it’s chocolate!
My oldest and I made it this weekend in less than 10 minutes and we brought it over to a BBQ and it was devoured by adults and kids. I’ve never really been into baking, but I have been dabbling a little and finding simple things that I can try. Enter:
Vegan Chocolate Bark
1 jar (12-15oz) of Coconut Manna (different from coconut oil, it is also called coconut butter and is found in the grocery store near the shredded coconut)
1/2 bag of Enjoy Life chocolate chips (we use this brand because it is gluten, soy, dairy, and nut free)
Alternative to chocolate chips: cocoa powder and maple syrup, add to taste
Optional: Any toppings you like! We used a seed blend we found at Trader Joe’s, but you could use pumpkin seeds, dried cranberries, chocolate chips, almonds, etc. You could also add any flavor or extract that you like- I’m going to try peppermint extract next time. I love Andes Mints!
Using the double-boiler method, add entire jar of coconut manna and stir until melted.
Once coconut manna is melted, add 1/2 bag of chocolate chips and stir until melted. (If you choose to add flavoring or extracts, now would be the time.)
Pour onto a baking sheet that is layered with parchment paper or a baking mat.
Sprinkle toppings over the surface.
Place in fridge or freezer until completely set.
Break into pieces and store in fridge or freezer.
