Before the food coma sets in, I thought I would share a simple and healthy recipe to try this week. If you are anything like me, there will be a ton of cooking for Thanksgiving and you’ll be all cooked out. This soup is amazing and so easy! I’m not sure why it took me so long to try making a carrot soup. This is definitely a fan favorite!
If you have an Instant Pot, it only takes 3 minutes to cook!
No Instant Pot? No worries. You can throw it in the slow cooker for 4-6 hours or simmer on the stove until the carrots are soft.
