I'm that mom. Because I've spent years researching nutrition and the crap that's put in our food for companies to make a profit. I'm good with real wheat in bread, with eating barley, and farro. Food in it's intended whole food state. I'm not good with processed wheat without any of the nutrients. Processed gluten is being used in everything from soy sauce to twizzlers to ketchup, gum, and BBQ sauce.
Unlike the claim outlined in the book, Wheat Belly. According to an article on Food Navigator USA: "Quantitatively gluten has not increased in wheat. However, we are eating more gluten overall because it is added as an isolated product to so many foods."
Do you ever feel really bloated after a big pasta dinner? We don't feel that anymore because we use brown rice and quinoa pasta. If you are near a Trader Joe's, try their Organic Brown Rice and Quinoa Pasta. I know. I was skeptical at first. Won't it taste like cardboard? Won't it be mushy? The answer: Nope. My husband is an Italian from New York and couldn't tell the difference, except that we don't get the huge gut after eating it. It's easier to digest.
Gluten reactions are real.
It's easy to make light of this issue (with Jimmy Fallon), but to those people it affects, it's no laughing matter. It causes some serious problems. Fun fact: You aren't born with Celiacs. It's an autoimmune disorder you develop.
A study done by Mayo Clinic and the National Institutes of Health estimates that about 1 in 141 people in the U.S. have celiac disease, although the disease often goes undiagnosed. Celiac disease is most common in Caucasians. The Mayo Clinic also states that the precise cause of celiac is not known.
The American diet is filled with so much artificial junk that gluten was bound to create problems. Science has surpassed our ability to digest these foods. We were made to digest plants and meat, not high fructose corn syrup, artificial flavors, and processed gluten devoid of all nutritional value. So to play it safe, our family does not consume large quantities of gluten. We try to avoid it as much as possible. Read labels!
